Fox Pines is a Colorado Springs neighborhood on the border between Monument and Colorado Springs off of Baptist Rd just east I-25. Its a beautiful layout with spacious lots and plenty of trees. Some homes even boast a coveted combination of trees AND Pikes Peak views. The home at left is very indicative of the houses in Fox Pines - because of the area and school district 38, the homes in this neighborhood tend to appreciate quite a bit faster than other surrounding neighborhoods. Copper Ridge Colorado SpringsColorado Springs Copper RidgeWell the new development in Northern Colorado Springs called Copper Ridge at Northgate will be adding more restaurants and retailers (and not just chains thankfully) They will be joining outdoor giant Bass Pro Shops.

WHO?

Bourbon Brothers Smokehouse & Tavern will be the first of two sit-down restaurants planned at Copper Ridge. Denver-based Southern Hospitality Development Corp. will be the management team of Bourbon Brothers. Among other items, Bourbon Brothers will feature ribs, brisket, chicken-fried steak, fried chicken,



cheese grits and collard greens. The restaurant will be built on 1.5 acres with about 7,000 sq feet. There won’t actually be a distillery, but the restaurant’s floor plan shows dining areas with 124 seats, a 64-seat sunroom and an expansive bar area.

In addition to the new southern/bbq style restaurant there will be a seafood and chop house restaurant planned by the same investors,  although the name of the restaurant has not been released yet, it will cater to a higher price point. The locations at Copper Ridge are meant to tap into higher household incomes and growing numbers of rooftops in northern Colorado Springs and northern El Paso County.

WHEN?

According to an article in the Gazette Bass Pro Shops is targeted to open in September 2013 while Bourbon Brothers will be close behind with a slated opening of October. The seafood and chophouse restaurant, meanwhile, will most likely open about 90 days after Bourbon Brothers on a site near Bass Pro as well.

STYLE?

The restaurant itself will give the appearance of a Southern farmhouse (above) — including a front porch and windows with shutters — with a distillery attached. The architecture for the Seafood and Chop House has not been disclosed yet, but will most likely stay in line with their projected higher price point.

SIDENOTES:

Southern Hospitality Development Corp., a franchisee of Southern Hospitality BBQ Restaurants, owns and operates the Southern Hospitality Restaurant in Denver, across from Coors Field in LoDo. The same management team will operate Bourbon Brothers. The Southern Hospitality concept and restaurant was Co-created by singer and actor Justin Timberlake as well as OneRepublic front man Ryan Tedder.  In addition to Denver, another Southern Hospitality restaurant is located in New York with further locations slated for Atlanta and Austin.

Finally:

According to an article in the Gazette, Copper Ridge developer Gary Erickson said he’s working with 10 retailers and restaurants who have signed letters of intent — an indication of strong interest in the project. Jimmy Johns Sandwhich Shop is also slated for an opening in 2014.
